Course description

This refresher course is for staff who have already obtained the Royal Society for Public Health Level 2 Food Safety in Catering qualification, and should be undertaken 3 years after qualifying.


 


Training objectives

This course provides an opportunity to refresh your knowledge of the key topics for ensuring food safety.

Learning outcomes
By the end of this session it is anticipated you will be able to:
 


  • Explain how to store, prepare and serve food in a safe manner which minimises the risk of food-borne illness

  • Describe how to protect food from contamination with micro-biological, chemical and physical hazards

  • State how to control allergenic hazards in food

  • Recognise the controls which minimise the risk of food-borne illness including temperature control, stock rotation, good personal hygiene, cleaning and disinfection and pest control.
